Jack & Chill Frozen Jackfruit Chunks 300Gms
1 teaspoon Cumin seeds
1 large Onion
1 teaspoon Ginger
1 teaspoon Garlic
1 teaspoon Green chilly (adjust according to spice level)
1 large tomato made into a paste
1 tablespoon coriander powder
½ teaspoon Red chilly powder (optional)
½ teaspoon Amchur powder
Pinch of Dried fenugreek leaves (Kasuri methi)
First make a paste of onion, ginger, garlic & green chilly.
In 2 tbsp of oil in a pan, saute the jackfruit pieces for few minutes and keep it aside. In the same oil add onion & cumin seeds along with ginger-garlic-chillies paste. Once the onions change colour add the tomato paste and fry until the oil is released from the mixture. Add the jackfruit pieces and cover them with the mixture. Add salt, coriander powder, red chilly powder, amchur powder & kasuri methi. After about a minute of frying the above, add enough water to cover 3/4th of the mixture. Cover and simmer for about 10 mins until the jackfruit is cooked. Garnish with coriander leaves & serve with rice or chapati.
